Alberto Sangiorgio says his program to train employees with disabilities to become chefs will teach them everything A to Z. Once they have learned the recipe or skill, it goes into the blue book. After the 26-month course is complete, it will conclude with a 4-5 hour test where they will prepare an entire meal.
